Leftover Prime Rib Recipe?

Hey all, I’ve got just over two pounds of (just slightly over-cooked) leftover prime rib that’s been sitting in my fridge. Today I cut out the excess fat and congealed blood, cubed up the remains and put it in the freezer to keep until I can decide what to make with it. Does anybody have a good recipe I can make with this meat?
