I loved when I was on the paleo diet a few months ago. A friend had a cookbook and I'd help her cook almost nightly. Though after Thanksgiving we both kinda gave up on the diet.
Now that I realized I'll have more free time this semester, and looking to stop eating out, I bought my first paleo cookbook: "Quick and Easy Paleo Comfort Foods"
I noticed most of these recipes have anywhere from 4-8 servings. Seeing as I am one person (and very easy to over eat on good paleo), I was wondering, what should I do? Make one dish and eat nothing but that dish for a few days? Maybe cook two dishes and alternate left overs?
Sometime this weekend I want to try one or two recipes. it's just this left over issue!
