Beetroot chips!






So, I made beetroot chips and they were really really good and easier to make then sweet potato chips. Slice beetroot (2 medium) thinly on a mandoline, spread out in a single layer on two trays lined with baking paper, drizzle with coconut oil, sprinkle on salt + pepper. Put trays in the oven at 350F for 20 minutes, after 20 minutes turn the oven down to 300F and bake for another 20 minutes. No need to flip. Let them cool, they get crispier as they cool down. Serve!!- with mashed avocado for maximum delicousness.
