Fall…my favorite time of the year. But with all holiday cooking and family gatherings, it can be hard to stay on track with healthy, clean eating. I find it fun this time of year to take some of my favorite fall flavors like pumpkin and experiment with traditional recipes to make them healthier. The taste of a Starbucks pumpkin latte (skinny, of course!) definitely tops my list. So after playing around a bit, I came up with a recipe that tastes just as delicious but is much healthier option: protein pumpkin muffins with chocolate frosting! Who said you can’t have your cake and eat it too?!
