Turkey Kale Muffins






Ingredients:

1 lbs lean ground organic turkey*

1 small red vidalia onion

2 cloves garlic, chopped

5 kale leaves, chopped

3-5 small beets, chopped

1/2 cup basil

1 tbsp grape seed oil

Sea or Himalayan salt, to taste


*Substitute for Quinoa for a meatless option.


Directions (this can be cooked two ways):


OVEN

Heat oven to 350. Chop all veggies, then mix with ground turkey and place in muffin tin. Bake for 30 to 40 minutes. Serve.
