Mini Egg Frittatas

Mini Egg Frittatas


Ingredients:

1 dozen eggs

1-2 cups ground turkey or beef, pre-cooked

tomatoes, chopped

spinach or kale, chopped

onions

salt, to taste

pepper, to taste


Directions:

Preheat oven to 350 degrees.Whisk eggs, season with salt and pepper and pour into a greased muffin tins half or 3/4 to the top. Add your veggies and pre-cooked ground turkey or beef. Give a little stir to incorporate the ingredients into the egg mixture. Bake for 25 minutes. Serve.


Yields 12 mini frittatas.
