I recently came up on two big tubs (1 gallon each according to the label) of kimchi in addition to about a head of cabbage worth of sauerkraut for free. I'm mostly worried about all the kimchi (there's a certain point of fizzy fermentedness after which I can't eat it).
Anyways, is it possible to eat too much fermented vegetables? I plan on pretty much having a large serving of kimchi/sauerkraut with every meal so I can kill it before it gets too fermented. Are there any downsides to this in terms of health?
