Home Made Broccoli And Stilton Cheese Soup




This is my recipe to make a good hearty broccoli and stilton soup. Like me in time you will probably adapt and change how you do things. This isn’t going to be a recipe with exact amounts.


So let’s get started with what you need to make a good broccoli and stilton soup.


A good head of broccoli


Stilton cheese


2 Medium sized onions – white or red, sliced


2 – 3 Cloves of garlic


2 Medium sized baking potatoes, peeled


Stock – I tend to use a vegetable stock cube


Approximately 800 ml of hot water


A couple of knobs of butter


Salt and Pepper


Fresh or dried herbs


A hand blender


First place the butter in a large pan, along with the sliced onions and roughly chopped cloves of garlic over a low to medium heat. Let them sweat for approximately 10 minutes or until the onions start to go translucent.


Next chop up the broccoli head and stork and place this in to the pan to also sweat. You can help this a bit further by placing the lid on the saucepan. Chop up the peeled potatoes into medium sized cubes and also place in the pan.


While this is all going on, crumble a vegetable stock cube in a measuring jug and pour over approximately 700 – 800 ml of hot water. Stir so as to help the stock cube dissolve.

Pour the stock over the contents in the saucepan and briefly bring to the boil, before simmering for approximately 5 minutes. Take off the heat and let it cool.


Place a tea towel on the kitchen worktop and place the saucepan of soup on top. The tea towel will stop the saucepan from moving around when you start to blend the contents of the saucepan.


At this stage add the stilton cheese a couple grinds of black pepper some salt and the herbs such as a bunch of parsley. Give it a quick stir to mix everything together.


Put the hand blender into the saucepan and give it a few bursts to break down the soup ingredients, minding you don’t spray it over your kitchen. As the ingredients begin to liquefy you can start to blend until you have a nice smooth soup. Taste to see if more salt and pepper is required.


Either re-heat the soup and serve with a French stick or pour into to containers and place in the fridge/freezer to have at a later date.
