I'm trying to get a half if a grass fed steer. I want them to grind the organ meats in with some sausage, I want some bones, and I want some thin sliced lean beef for making jerky. I'm in phoenix, az. Does anyone have any suggestions as to how to navigate the process? (How can i find a place that will do that?) Also, is there anyone in my area that's already been through the learning curve to find a butcher here?
