Many Mexican dishes can be made Paleo friendly with just a few changes. The biggest offenders are flour or corn tortillas, and refried beans. You may find many gluten-free Mexican recipes that aren’t Paleo because they sub in corn tortillas for flour tortillas. While this may fix the gluten problem, on Paleo corn isn’t allowed so it’s not a Paleo fix. There’s really no replacement option for the beans, so you’ll just need to leave them out, although some recipes get creative and use sweet potatoes, as we’ll see.
1. Creamy Paleo Chicken Enchiladas Verdes
Let’s start things off with enchiladas verdes, made in the Paleo way substituting sour cream with a special Paleo friendly version made from cashews. If you are new to the Paleo diet, you might be surprised to see a creamy dish on a diet program, as creamy food items are typically shunned when it comes to dieting due to their high fat content. But with Paleo you can have a creamy entree as long as the cream is not from a dairy source. It’s great that they’re topping this with fresh avocado, adding instant fiber and healthy fat to the meal.
2. Beef Turnip Greens Enchiladas
This enchilada recipe uses plenty of grass-fed ground beef, as well as bacon so you know it is going to be extra flavorful and meaty. They didn’t forget the vegetables though, and they are using turnip greens, as well as onions, and carrots. Black olives give this a distinctive taste, and they have even added some ground chipotle chili for extra flavor. Some of the foods you discover on Paleo are things you probably wouldn’t have considered food before, like turnip greens. So many times turnip greens end up in the trash, rather than being used in a recipe.
3. Green Chicken Enchilada Meatballs
Who says enchiladas need to look like enchiladas? When they say that these are “green chicken enchilada” meatballs they are saying that these are green enchiladas, i.e. enchiladas verde, not that the chicken is green. If your chicken is green please throw it out, don’t cook it. Meatballs made with chicken are a nice change of pace from beef meatballs, although you could use ground beef instead of chicken if you wanted beefy enchilada meatballs instead. The trick to these meatballs is how they get the enchilada taste into them. You’ll be impressed!
4. Beef Tongue Enchiladas
We’re guessing you’ve never tried enchiladas made with beef tongue. Paleolithic man definitely didn’t let anything go to waste when they brought down a beast, and tongue would have been on the menu as its a lean piece of meat with plenty of protein and minerals in it. Not that you need to eat beef tongue to survive in our modern world, but there’s no reason why this shouldn’t be on the menu, along with all of the other cuts of beef. For those that are not so inclined as to try beef tongue, they do mention that you can use any other source of protein, so if you want to try this recipe don’t pass it up just because it has beef tongue as the title ingredient.
5. Cashew ‘Sour Cream’
Sour cream is the perfect topper for enchiladas, but you can’t have regular sour cream as it’s dairy, and there’s no dairy allowed on Paleo. For years vegans have been using cashews to make creamy concoctions without using any dairy, so take a page from their notebook with this sour cream replacement made from cashews. You’ll have to convince yourself that it’s made from a nut and didn’t come from a tub of sour cream from the fridge.
6. Sweet Potato Enchiladas
Baking sweet potatoes right into your enchiladas is a great way to increase the amount of antioxidants and fiber you’re getting, while providing the right texture and helping to replace tortillas. Notice how she’s using grass-fed ground beef. This can be harder to find and you may need to visit grocery store that carries all-natural foods like this, and you’ll also pay a little more compared to conventional ground beef. It’s worth it. If you can’t taste the difference at least you’ll have peace of mind.
7. Beef Enchilada Stew
This stew is a pretty easy way to make enchiladas without following the traditional enchilada format. With plenty of stew meat and added bacon you’re going to be in meat heaven, and don’t worry because she’s serving this over a bowl of roasted vegetables, making for a complete meal. Making enchiladas into a stew makes the absence of tortillas undetectable, and all your taste buds will know is that you’re eating enchiladas.
8. Beef Enchilada Cabbage Rolls
Cabbage takes the place of tortillas in this hybrid creation that is half enchiladas and half cabbage rolls. The cabbage is going to give you way more nutrition than flour tortillas ever could, and you’re getting extra fiber from this cruciferous vegetable that has documented anti-cancer properties. Not that we’re counting carbs but cabbage is also lower in net carbs than flour-based tortillas, and you don’t have to wonder how cabbage was made. The other ingredients here are all Paleo friendly, and bring you the classic enchilada flavor.
9. Chicken Enchiladas
These chicken enchiladas are the closest thing to a traditional enchilada recipe that we could find that’s also Paleo friendly. They make the tortillas for this out of egg whites and coconut milk, a pretty ingenious way to get the grains out while still retaining the look and texture of enchiladas. If you follow Paleo recipes long enough you’ll develop your own instincts for how to replace offending ingredients with ones that are easily digested by your body.
10. Enchilada-Spiced Pulled Chicken
If you love pulled chicken or pulled pork, you’ll love this pulled chicken that is infused with the taste of enchiladas. Follow their serving suggestion by having this as part of an enchilada salad, with the pulled chicken as the highlight, some fresh greens, some avocado, and top it off with a dollop of “sour cream” the recipe for which you’ll find at the bottom of this page. This is more of an outside-the-box enchilada recipe, and takes an open mind, but the payoff is very satisfying.
11. Simple Paleo Tortillas
Most Paleo enchilada recipes do their best to get rid of the tortillas, but they are such an integral part of enchiladas that it’s hard to do without them. Why not make up a batch of Paleo friendly tortillas that you can use in place of flour or corn tortillas? Here they’re using arrowroot powder and coconut flour to take the place of wheat flour, which replicates the texture and taste pretty closely, and keeps you well within the bounds of the Paleo diet.
12. Paleo Enchilada Sauce
Enchilada sauce seems pretty harmless, until you see what goes in it. Take Emeril Lagasse’s recipe, which would be fine if it weren’t for the 3 tablespoons of vegetable oil and one tablespoon of flour. Yuck! Vegetable oil is not a Paleo oil, and flour gets the ax, so you’re not left with much once you take those out. Luckily we have this recipe for Paleo enchilada sauce to rescue us, and provide all of the classic enchilada flavor you’re looking for.

On Paleo you’ll be eating your fair share of meat, and gravy just makes meat taste better. But a traditional gravy recipe will use flour, or cornstarch, or dairy, all of which you’ll be avoiding when you’re eating the Paleo way. You’ll find that on Paleo you can have just about anything, as long as you take steps to remove the bad ingredients and replace them with better ones. The following recipes give you the savory gravy taste you’re seeking, without using any ingredients that will set you back.
1. Easy Gravy
We like easy, as it is definitely the way caveman would have done things. Keep it easy and you keep it Paleo in most instances. This recipe really does focus on making it easy to make, including an uncomplicated recipe list and just four steps from start to finish. We like that they give you the option of using ghee instead of fat drippings because sometimes those aren’t available, but you can always have a supply of ghee on hand. This is a yummy turkey gravy that you can pour onto more than just turkey. Try it over chicken as well as your vegetable side dish.
2. Gluten-Free Gravy
Eating Paleo means you’ll also be eating gluten free, since you’re getting rid of all grains, including wheat. This gluten-free gravy is part of a larger recipe that has you making a brined turkey, and they walk you through all of the steps. The entire recipe is Paleo approved, so it only makes sense that you’ll want to cook up the turkey to go along with it, especially considering that you’ll be using the drippings from the turkey to concoct the gravy. The best part is that once you have the turkey done the gravy steps are very easy, and all you need is a side of veggies for a complete Paleo meal.
3. Paleo Cream Gravy
Sounds like a confusing title, since cream isn’t allowed on Paleo, so how did they pull of this gravy wonder? They’re using one of the more popular items to produce a creamy texture and flavor on Paleo: coconut milk. On Paleo you’ll be using the full-fat version of coconut milk, so don’t go for the light or reduced fat varieties. This gravy is using bacon fat drippings so you know it’s going to have a robust yet creamy flavor. A little bit of arrowroot powder thickens it up and puts the finishing touches on its gravy-ness. They’re pouring this over a Paleo chicken fried steak, so why not follow their lead for a delicious dinner?
4. Apple and Onion Gravy
Apples provide a sweetness to this gravy that you typically don’t get in a savory food item. The gravy is the byproduct of amazing looking braised pork wings, which uses all Paleo friendly ingredients and comes highly recommended. You take the leftover juices from the pork wings, which includes sauteed onions and caramelized onions. Pork wings are a fun way to eat pork, and a suitable alternative to chicken wings. They have them shown with a side of asparagus spears, which makes a nice complete Paleo meal and it just looks great smothered in the apple and onion gravy.
5. Primal Biscuits and Gravy
This biscuits and gravy recipe is sure to satisfy your craving for biscuits and gravy without breaking any Paleo rules. Once you solve the biscuit problem you’re good to go, and here they’re using a mixture of almond flour and coconut flour to make light and fluffy biscuits that will go great with gravy. The gravy is made from pork sausage, coconut milk, and seasonings so it comes out just right. It uses arrowroot powder to thicken the gravy up so it has the perfect consistency. You can also play with this amount until you get the gravy how you like it.
6. Turkey Gravy
You can’t go wrong with this turkey gravy, it’s sure to satisfy and you can make extra to have leftovers that you can use for a few days. Use ghee instead of butter for the browning of the turkey and onions, and coconut cream instead of regular cream for the whole cream, and you’re all set. Most of the flavor is going to come from parts of the turkey, and as such this tastes best when poured over turkey, but it also tastes great on some cauliflower mashed potatoes.
7. Bacon and Thyme Gravy
We couldn’t have a Paleo gravy collection without a bacon-infused offering. This gravy boasts the classic flavor of bacon thanks to three thick slices being used in the recipe. The gravy is being used to top a chicken breast, and this entire recipe is Paleo friendly and something you should try out. What you’ll end up with is a tasty way to spruce up a chicken breast if you’ve gotten into a rut when it comes to serving up chicken. This dish would be best presented over a pile of cauliflower rice or other vegetable side dish.

Paleo for a day
There is so much information on the Paleo diet online, that it can be overwhelming. This post will give you a basic way to switch from your present lifestyle to the Paleo lifestyle. It is not meant to be a full guide to Paleo, but rather a way that most of us can gradually ease into this healthier lifestyle. You should always check with your doctor before any diet or exercise change.
This is a simplified version of changing from the typical American diet, to the Paleo diet lifestyle. There has been evidence that even switching to Paleo 80%, will still bring you great weight loss results. Again, please note that if you want to switch to Paleo to help with autoimmune disorders, you should follow the system 100%.
Lets start a typical day. My typical day started with a bowl of cereal. Usually the ones with the dried fruits or stawberries. I often had a cup of coffee with two sugars. If your breakfast is anything like this, including breakfast bars etc, the first thing you want to do is come up with a healthier breakfast. To switch to Paleo, we are going to want to do two things.
Now that may sound easy, but old habits are hard to break. With Paleo, you are going to be avoiding packaged foods which usually contain, way too much salt or way too much sugar, as well as preservatives that can make you fatter or retain fat, as well as making you unhealthy. Now back to your breakfast.
Lets start with a bacon and egg breakfast. It would help if you had organic foods, but for now just use what you have. If you dont have time to prepare bacon, just make a couple of your favorite eggs. If you happen to have leftover vegetables, you can include them. Its also good to eat a little fresh fruit in the morning. For now, try not to have coffee or tea, you can decide on that later, but for now lets just have a full glass of cold water with lemon if you have it. So there you have a nice breakfast full of protein and omega 3, and you have reduced sugars and avoided grains. If you have bacon, this is certainly an enjoyable breakfast that is superior to the processed carb cereals you were eating.
If you want snacks before lunch, or if you are hungry , try eating some nuts (except peanuts, they are actually a bean), an apple is also a great choice.
Now we will tackle lunch. Lets say your usual is a sandwich. So you have some lunch meats available. We can eat the lunch meats without the bread. Yes I know breads are hard to give up, but later on with a good Paleo cookbook, you can learn to bake your own Paleo bread. You may also be able to buy a Paleo bread in a local store. So for now lets use some lunch meat with some salad greens. If you are not concerned with giving up dairy, also have a good berry or your favorite flavor yogurt. If you are used to going out to eat, i recommend a good oriental restaurant. You can have shrimp & snow peas or broccoli or chicken and broccoli or anything along those lines. If you must go to a fast food joint, try Wendys as they have a number of decent specialty salads with meat and fruits. Boston Market usually offers a chicken and vegetable dish that works perfectly.
So far so good?
Now at some point in the day, throw in some exercise. A brisk walk or jog or even some aerobics or jumping jacks. Exercise is a key part of the Paleo lifestyle.
Now its time for dinner. There are a lot of great choices for dinner just remember to skip the grains and legumes. So you could have steak, salad, sweet potato or shrimp on the barbecue, barbecue ribs, losbster, the skies the limit. You may have a glass of wine if you wish, but be sure to drink enough water.
Its always a good idea to try to not eat after7 or 8 pm. If you are hungry though, feel free to eat leftovers from your above meals, or a yogurt or fruit. Its important not to eat carbs right before you go to sleep.
End your day by getting a good nights sleep of 7-8 hours depending on your lifestyle.
Guess what, you just went Paleo for a day. Now keep in mind if you eat and exercise like this, you will get results. If you dont have a health issue, you can allow yourself a piece of homemade bread, or even a brownie at the end of the week.
As I mentioned the more you do this, the easier it becomes. Also look into getting a good guide and cookbook like Paleohacks Cookbook to help you create more variety in your meals. Although what you did this day is not that difficult, it may have a good effect on you. You may feel less bloated, more energy, and quite possibly more rested and healthy.
If you avoid grains,legumes, added sugars and preservatives…. you are Paleo.
